to malt production

Selection of raw materials
Initially, raw materials are selected for malt production. Usually, it is barley, but sometimes other grains such as wheat or rye are used.

Soaking
We soak the raw materials in water for several days. This process promotes the germination of the grains, the activation of enzymes, and changes in the chemical composition.

Germination
After soaking, the grain is left to germinate for 6 days. During germination, chemical transformations occur, promoting the formation of enzymes and the partial breakdown of starch.

Drying
After milling, the malt is dried in a specialized dryer. During drying, moisture is removed, which prevents the product from spoiling. We use innovative drying methods at a temperature of 25°C, which promotes the accumulation of enzymes.

Custom Milling
The germinated grains are dried and milled to a size ranging from 1000 to 200 microns. Milling enhances the release of color, flavor, and aroma. The milling is done using a custom-designed mill.

Thermal Processing
After drying, the malt is roasted using a specialized roasting process. This step influences the color palette and aroma of the malt.

Milling
The fermentable malt is milled to achieve the desired texture and particle size.

Packaging
The finished malt is packed in special packaging for storage and transportation.

The recommended shelf life is 12-18 months. Caramel malts are best used sooner to preserve their fresh aroma. Store in airtight containers or bags protected from moisture.
